Чем вы займетесь

We will tell you everything you need to know about what makes Italian coffee so special.
Coffee making is an art that brings together people from around the world, from growers, to importers, roasters and finally the baristas who serve you coffee!

At the start we'll talk through the different varieties of coffee beans and what makes them special, there flavours and texture. Everything from the type of soil on a plantation to the labour in harvesting a particular bean. We will cover areas such as fair trade and the environmental impact of coffee growing.

After we will explain the local differences in the tradition of coffee roasting in Italy and how this creates the differences in taste around the country.

Then we go into the roasting here in Aspra, the process that makes the coffee what it is, explaining the method and how this affects the taste. You will then roast and grind cofee and be able to take it away with you.

When we've finished we'll go to our favourite local cafe overlooking the sea and Palermo to taste drink some coffee from the roastery.

I've been in Sicily for 2 years now and have worked with the local roastery here in Aspra. Coffee is a passion for Italians, the local coffee roaster here is Francesco. We want to show you what makes Italian coffee so special.

Francesco has been roasting coffee for 10 years, he took over the business from his father who started in 1968. and he is now the main supplier of coffee to cafes and the locals here. His knowledge of what goes into making coffee, the industry and the distribution allows us to understand the big picture behind the coffee industry.

His roastery will take you through this entire story from start to finish, from the plantation to the coffee in your cup.
