Чем вы займетесь

This workshop is not only making Miso soup and rice balls. As you noticed, I am passionate about fermentation. So, of course,​ the workshop involves some background of the fermented condiments of Japan! Such as Miso and soy sauce. They are the soul of Japanese cuisine.
After the workshop, you’ll get a Miso soup kit as a souvenir. (2 Sachets of Dashi broth and raw Miso.)

1, Introduction about Miso

You’ll learn about the most important ingredients for Miso soup.
What is Miso? How it’s made? How the Japanese use it?

2, Prepare Dashi

I‘ll show you how to make basic Dashi with kelp and Katsuobushi, which is fermented bonito.

3, Cut seasonal vegetables

We’ll use Japanese vegetables and cutting styles, both of which may be new for you.

4, Cook all the ingredients together

I'll show you a very interesting method here. If you know this method, you can cook any ingredients together easily in a pot. It's a simple and time-saving way of Japanese cooking.

5, Make rice balls

You can't forget rice when you eat Miso soup. Rice balls are also Japanese soul food.

6, Add the Miso in the ingredients

Since 2012, I have been sharing how to ferment homemade Miso in Japan and overseas. I call myself a Travelling Fermenter who travels around and shares the goodness of fermentation. My major was English and Vietnamese and I studied nutrition and Macrobiotics.

While I was travelling, I always enjoyed exchanging food culture with people. Everyone was very happy to find about how the Japanese cook and also to taste the homemade dishes of Japan while also learning the background of the country’s fermented condiments. These experiences encouraged me to organize this workshop.

Где вы побываете

I will conduct my workshop at my family home close to Unoki station in Tokyo. The Unoki station is accessible by Tamagawa line from Kamata station or Tamagawa station.
We will meet at the Unoki station and walk to the workshop place. It takes about 5 mins.

It was an awesome Experience with Akane. I ve learn so much about Miso Soup. Very charmant Woman that explained all worksteps exactly so we can make it very easy at Home now. I doesnt know so much About Miso before and what is the better Miso and how you can make Miso.

Best miso soup I have ever had! The workshop was great, I really enjoyed this unique cooking experience. Akane is very passionate about fermentation and making healthy miso soup everyday.

Akane is really passionate. The workshop was clear and efficient. We definitely recommend it ! Unfortunately we couldn't reach the handmade miso workshop but even though, Akane take a time to explain us everything about this practice. We stayed with her longer than expected ! She knows a lot about organic agriculture, fermentation food and alternative life style. It was a rich experience. Thank you again for sharing your knowledge with us !
