Want to shake up your Thanksgiving routine? Greg Dunmore will teach techniques and recipes for turkey and accompanying dishes to enliven your holiday table.

“Turkey and all the trimmings” takes on new meaning in this Japanese-inspired hands-on class from chef Greg Dunmore.

You’ll learn how to crisp up that glorious turkey skin and how to make epic Nanban-zuke, the “Japanese” (via Portugal/Spain/North Africa!) dish we bet you will crave all year long. And turkey leftovers? Greg will share genius ideas for everything from cocktail party fare - Sweet & Sour Turkey Meatballs, anyone? - to comforting after-the-party Turkey Curry.

Seasonal vegetable dishes will enhance the menu you and your classmates sit down to share after the cooking is done, accompanied by sake, beer and wine, and non-alcoholic drinks.

Shichimenchouzenni (Braised Turkey with Root Vegetables)
Turkey & Spinach with Sesame Dressing
Turkey Curry
Turkey Nanban (Fried Turkey with Brown Rice Vinegar Marinade)
Fuyu Persimmon, Daikon & Carrot Salad with Olio Nuovo (New Olive Oil)
Charred Brussels Sprouts with Crispy Turkey Skin and Spicy Ponzu

My passion is teaching people the skills they need to gain confidence in their own kitchens. I love seeing the excitement on students' faces when the master something they had feared. My mission is reminding students to take in the world around them, treat others with kindness, and learn about & respect each other’s cultures – all through the medium of shared food experiences.

I've led cooking classes for kids & adults at culinary, elementary & middle schools throughout the San Francisco Bay Area. I studied pastry at the Art Institute of Seattle, and later also graduated from Tante Marie's Professional Culinary Program in San Francisco.
